PREPARATION

  1. Fry meat in hot oil, stirring constantly, until golden.
  2. Add 500 mL warm water and contents of Fant packet, and stir.
  3. Add in cubed butternut squash, rinsed and drained kidney beans and sugar corn.
  4. Sauté about 15 minutes, stirring occasionally, until the squash is tender.

SERVING

Sprinkle with chopped coriander leaves, and serve with tortilla chips or polenta.

Pour cooked polenta into a baking dish, let cool, then cut into squares, circles or other shapes. Place polenta in the middle of the plate and surround with chilli con carne for an interesting presentation.
